Ingredients
2 ½ cups all-purpose flour
1 cup granulated sugar (crumb)
1 teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
¾ cup granulated sugar (filling)
2 large eggs
¾ cup fresh lemon juice
2 tablespoons lemon zest
Instructions
Preheat oven to 350°F (175°C)
In a bowl, combine flour, granulated sugar (crumb), baking powder, and salt. Stir in melted butter until crumb forms.
Press two-thirds of the mixture into a greased 9×13-inch pan. Bake for 10 minutes, then cool slightly.
In another bowl, beat cream cheese, granulated sugar (filling), eggs, lemon juice, and lemon zest until smooth. Pour over the cooled base.
Sprinkle remaining crumb mixture on top. Bake for 35-40 minutes until golden and set. Cool completely, then refrigerate for 2 hours.
Cut into 24 bars and serve.
Notes
Use room-temperature cream cheese for smooth blending.
Chill fully before cutting for clean slices.
Store in an airtight container in the refrigerator for up to 3 days.
