Ingredients

Graham cracker crumbs
½ cup melted unsalted butter
16 oz cream cheese
1 cup granulated sugar
1 cup heavy cream
4 cups fresh berries (strawberries, blueberries, raspberries)
1 tbsp agar agar
Zest and juice of 1 lemon

Instructions

Mix graham cracker crumbs with melted butter. Press into a 9×9-inch dish and chill for 20 minutes.
Beat cream cheese with sugar until smooth. Fold in whipped heavy cream.
Dissolve agar agar in warm water. Cool slightly, then fold into cream cheese mixture.
Spoon half the custard over the base, add a layer of berries, and repeat. Chill for 6 hours.

Notes

Use gluten-free graham crackers if needed.
Clarified butter can replace regular butter.
Chill fully before serving.
Adjust sugar based on berry sweetness.
