Ingredients
2 ¼ cups all-purpose flour
1 ½ cups granulated sugar, divided
1 teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, softened
3 large eggs, room temperature
1 cup whole milk
½ cup key lime juice, freshly squeezed
2 tablespoons key lime zest (from 4–5 limes)
1 teaspoon vanilla extract
2 cups powdered sugar
2–3 tablespoons key lime juice (for glaze)
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a bowl, whisk together flour, 1 ¼ cups sugar, baking powder, and salt.
In a separate bowl, cream butter and ½ cup sugar until light and fluffy.
Beat in eggs, one at a time, then stir in milk, key lime juice, zest, and vanilla.
Gradually add dry ingredients to butter mixture in three parts, alternating with two additions of wet ingredients.
Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick inserted comes out clean.
Cool slightly, then prick cake surface with a fork.
Combine powdered sugar and 2–3 tablespoons key lime juice in a bowl (adjust to desired consistency), then pour over warm cake.
Notes
Sift flour for a lighter texture.
Use fresh key lime juice and zest for maximum flavor.
Allow glaze to fully absorb into the cake for optimal moisture.
