Ingredients
Unsalted Butter (1 cup, melted)
Granulated Sugar (1 ¾ cups)
Eggs (3 large, room temperature)
Vanilla Extract (2 teaspoons)
All-Purpose Flour (⅔ cup)
Unsweetened Cocoa Powder (½ cup)
Salt (½ teaspoon)
Chocolate Chips (1 cup, semi-sweet or dark)
Graham Crackers (1 ½ cups, crushed)
Marshmallows (2 cups, large halved or mini)
Instructions
Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper
Melt butter and stir into sugar until smooth
Add eggs one at a time, beating well after each
Stir in vanilla, flour, cocoa powder, and salt
Fold in chocolate chips and crushed graham crackers
Spoon half the batter into the prepared pan
Sprinkle marshmallows evenly over the top
Add remaining batter to cover marshmallows completely
Bake for 30-35 minutes until a toothpick inserted near center comes out with just a few moist crumbs
Cool completely before cutting into 16-20 bars
Notes
Crush graham crackers by placing in a resealable bag and rolling with a rolling pin
For gooey s’mores, avoid overbaking
Store in an airtight container at room temperature for 4 days or freeze for 2 months
Marshmallows will puff and brown during baking but retain their shape
