Instructions
Preheat oven to 350°F (180°C)
Mix crust ingredients (graham crumbs, crust sugar, melted butter) in a bowl, pressing into a springform pan
Bake crust for 10 minutes, then cool completely
Melt chocolate chips until smooth, let slightly cool
Beat soft cream cheese and 1 ¼ cups sugar until smooth
Add eggs and vanilla, blending gently
Mix in melted chocolate and cocoa powder, sifting batter to ensure smoothness
Pour filling into cooled crust, smooth top
Wrap springform tightly, place in roasting tin and fill with hot water for water bath
Bake at 350°F (180°C) for 75 minutes
Turn off oven, crack door open for slow cooling
Chill cheesecake completely before slicing

Crust can be made with Oreo crumbs for extra chocolate flavor
