Ingredients
Large Eggs, 3 separated
Granulated Sugar, 3/4 cup divided
Cornstarch, 1/4 cup
Salt, 1/4 teaspoon
Whole Milk, 3 cups
Unsalted Butter, 2 tablespoons cut into pieces
Vanilla Extract, 1 teaspoon
Vanilla Bean Paste (optional), 1 teaspoon
Vanilla Wafer Cookies, 12-16 crushed (optional)
Ripe Bananas, 3-4
Instructions
Whisk egg yolks, sugar (1/2 cup), cornstarch, and salt in a saucepan
Add milk and stir over medium heat until thickened (10-12 minutes)
Stir in butter, vanilla extract, and vanilla bean paste (if using)
Meanwhile, whisk egg whites and remaining sugar until stiff peaks form
Fold 1/3 of egg whites into custard to temper
Pour custard back into egg whites and gently mix
Line a 2-quart dish with wafer crumbs and banana slices
Repeat layers, finishing with custard and wafer topping
Chill 4 hours or overnight
Serve cold with milk or additional wafer crumbs
Notes
Use spotty, ultra-ripe bananas for maximum sweetness
Chill at least 4 hours for optimal flavor
Optional: top with whipped cream or additional meringue
Vanilla bean paste can be substituted with 1 orange for citrus variation
