Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
24 ounces cream cheese, softened
3/4 cup granulated sugar
3 large eggs, room temperature
2 teaspoons pure vanilla extract
2 cups mixed fresh berries (strawberries, blueberries, raspberries)
Instructions
Preheat your oven to 325 degrees Fahrenheit.
Line a nine-by-thirteen inch baking pan with parchment paper.
Combine graham cracker crumbs and melted butter, then press firmly into the bottom of the pan.
Bake the crust for ten minutes and allow to cool slightly.
Beat the cream cheese and sugar together until smooth.
Add eggs one at a time, followed by the vanilla extract, beating until just incorporated.
Pour the cream cheese mixture over the crust and level the top.
Scatter the mixed berries evenly over the batter.
Bake for 35 to 45 minutes until the center is set.
Cool completely at room temperature, then refrigerate for at least 4 hours before slicing.
Notes
Ensure all dairy ingredients are at room temperature to avoid lumps in the filling. Use a sharp, warm knife to achieve clean, professional-looking squares when slicing after the bars have fully chilled.
