Ingredients
1 cup (2 sticks) unsalted butter, melted
2 cups granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 teaspoon lemon extract (optional)
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh strawberries, sliced
Zest of 1 large lemon
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
In a large bowl, mix melted butter and granulated sugar until combined.
Stir in eggs, vanilla, and lemon extract.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually add dry ingredients to wet ingredients, stirring until just combined.
Fold in strawberries and lemon zest gently, avoiding overmixing.
Spread batter into prepared pan. Bake for 25–30 minutes until golden and a toothpick inserted near center comes out with some wet crumbs.
Cool completely before cutting into squares.
Notes
Use very ripe strawberries for maximum sweetness.
For extra zing, add 2 tablespoons freshly squeezed lemon juice to the batter.
Store in an airtight container for up to 5 days.
Chill or freeze unbaked dough for future baking.
Substitute 1 teaspoon lemon zest with 1 teaspoon finely grated orange zest for a citrus twist.
