Instructions
Combine 2 cups granulated sugar and 2 cups water in a medium saucepan.
Heat over medium heat, stirring constantly until sugar dissolves.
Bring to a gentle simmer for 1 minute, then remove from heat.
Allow syrup to cool completely.
In a large pitcher, combine cooled syrup, 1.5 cups fresh lemon juice, 2 cups water, vanilla extract, and salt.
Stir thoroughly until all ingredients are well incorporated.
Taste and adjust sweetness or tartness as needed.
Chill in refrigerator for at least 30 minutes to meld flavors.
Serve over ice.
