2 cups all-purpose flour
1 ½ cups granulated sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup (1 stick) unsalted butter, softened
2 large eggs
1 cup milk
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Lightly grease and flour an 8-inch round cake pan. In a bowl, sift together flour, sugar, baking powder, and salt. In another bowl, beat softened butter until creamy. Add eggs one at a time, blending well after each addition. Mix in vanilla extract. Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Pour batter into prepared pan. Bake for 35 minutes until a toothpick inserted emerges clean.
Notes
Use buttermilk instead of milk for added richness. Ensure ingredients are at room temperature for optimal blending. For storage, cover tightly and refrigerate up to 2 days.
