Ingredients
1 quart fresh strawberries, hulled and sliced if large
1 cup granulated sugar
1 cup water
3 tablespoons cornstarch
1 small box strawberry gelatin
1 pre-baked 9-inch pie crust
Fresh whipped cream for serving
Instructions
Combine water, sugar, and cornstarch in a medium saucepan over medium heat.
Whisk continuously while cooking until the mixture boils and becomes completely clear.
Stir in the strawberry gelatin powder until fully dissolved.
Remove the saucepan from the heat and allow the glaze to cool for ten minutes.
Arrange the fresh strawberries bottom-side down into the pre-baked pie shell.
Pour the warm glaze evenly over the strawberries, ensuring all gaps are filled.
Refrigerate the pie for at least 4 hours until the glaze is completely set.
Serve chilled with a dollop of fresh whipped cream.
Notes
Ensure the glaze cools slightly before pouring to avoid wilting the fresh berries. Using distilled water helps achieve the clearest possible glaze. For the best texture, serve the pie within 24 hours of assembly.
