Ingredients
2 cups crushed graham crackers
1/2 cup melted unsalted butter
14 oz can sweetened condensed milk
12 oz can evaporated milk
1 cup fresh lemon juice (from 4–5 lemons)
1 tablespoon lemon zest
1/3 cup granulated sugar (optional, for intensified sweetness)
Instructions
Crush graham crackers into fine crumbs
Mix graham cracker crumbs with melted butter until moistened
Press mixture into the bottom of a 9-inch springform pan
Chill for 30 minutes in the refrigerator
In a bowl, combine sweetened condensed milk, evaporated milk, fresh lemon juice, and lemon zest
Stir in optional granulated sugar (if using)
Spread mixture evenly over the chilled crust
Refrigerate for 4 hours until set
Notes
Substitute graham crackers with digestive biscuits or shortbread
Use salted butter and omit extra salt if desired
Bottled lemon juice can be used but fresh is preferred
