8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups red fruit preserves (e.g., strawberry)
1 cup blue fruit preserves (e.g., blueberry)
Instructions
Mix graham cracker crumbs, melted butter, and granulated sugar until damp and crumbly. Press into a springform pan and refrigerate for 15 minutes.
In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Spread evenly over the crust. Chill for 1 hour.
Once set, carefully pipe or spread red preserves in half the dessert and blue preserves in the other half. Create a wave pattern where the colors meet. Refrigerate for 2 more hours before slicing and serving.
Notes
Substitute graham cracker crumbs with digestive biscuit crumbs if unavailable.
Use vegan cream cheese and dairy-free butter for a vegan version.
