Ingredients
1 box (15.25 oz) yellow cake mix
4 large eggs
1 cup (2 sticks) unsalted butter
1 cup full-fat sour cream
1 teaspoon pure vanilla extract
Instructions
Preheat oven to 325°F (160°C)
Grease and flour a 9×5 inch loaf pan or Bundt pan; line bottom with parchment paper if using loaf pan
In a large bowl, mix cake mix with 4 eggs until well combined
Add softened butter to the batter
Stir in sour cream and vanilla extract
Pour batter into prepared pan
Bake for 50-60 minutes until golden and toothpick comes out clean
Cool completely before serving
Notes
Room temperature eggs blend better
For greasing, use oil or non-stick spray
Sour cream can be substituted with plain Greek yogurt or cream cheese
Bundt pan yields a showier presentation
Cake freezes well, wrapped tightly in plastic
