2 (3.4 oz) packages instant pistachio pudding mix
3 ½ cups milk (whole or 2%)
24 oz whipped topping (thawed, like Cool Whip)
1 cup chopped pistachios (roasted, salted)
Instructions
Crush half the graham crackers into crumbs for the base layer
In a large bowl, whisk pudding mix with milk until smooth
Spread half the pudding into a 9×13-inch dish, top with a layer of crushed graham cracker crumbs
Repeat layers with remaining pudding and crumbs
Frost the top with whipped topping, then sprinkle chopped pistachios evenly
Refrigerate 4-6 hours until set
Slice and serve

For a halal option: Use non-dairy whipped cream
