1.5 cups graham cracker crumbs
0.5 cup unsalted butter, melted
16 ounces cream cheese, room temperature
1 cup creamy peanut butter
0.75 cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper.
Combine graham cracker crumbs and melted butter in a bowl until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom of the prepared pan.
Bake the crust for 10 minutes, then remove from the oven and set aside.
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth.
Add the eggs one at a time, mixing on low speed until combined.
Fold in the peanut butter and vanilla extract until the mixture is uniform.
Pour the filling over the prepared crust and spread evenly.
Bake for 35 to 45 minutes until the center is set.
Allow to cool completely before chilling in the refrigerator for at least 3 hours before slicing.
