Ingredients
1 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/3 cup granulated sugar
2 tablespoons granulated sugar
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 1/2 cups sliced fresh or frozen peaches, thawed and drained if frozen
1 tablespoon cornstarch
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (180°C)
In a large bowl, mix 1 cup flour, 1/3 cup granulated sugar, salt, and melted butter until crumbly. Press 2/3 of the mixture into an 8×8-inch baking dish.
In separate bowl, combine peaches, 2 tablespoons sugar, cornstarch, lemon juice, and 1/2 teaspoon vanilla extract. Let stand for 10 minutes.
Spread the peach mixture over the base. Reserve remaining crumble mixture and mix with 1/2 cup oats.
Sprinkle the crumble-oat topping over the peaches, covering evenly.
Bake for 35-40 minutes until golden and bubbly. Let bars cool completely (about 30 minutes) before chilling for 30 minutes.
Cut into 12 bars and serve.
Notes
Avoid instant oats—they won’t hold up.
Use 100% fruit juice instead of alcohol if needed.
For the cream layer, consider adding a thin cream cheese layer between the base and fruit filing if desired.
Bars freeze well in airtight containers for up to 3 months.
Adjust peach sugar to taste if using particularly ripe or sweet fruit.
