Ingredients
2 cups all-purpose flour
0.5 cup granulated sugar (for crust)
1 cup unsalted butter, chilled and cubed
16 ounces cream cheese, softened
0.75 cup granulated sugar (for filling)
3 cups fresh peaches, peeled and diced
2 large eggs
1 teaspoon pure vanilla extract
Instructions
Preheat your oven to 350°F and line a 9×9 baking pan with parchment paper.
Pulse the flour, 0.5 cup of sugar, and chilled cubes of butter in a food processor until the mixture resembles coarse sand.
Press the crumbly dough firmly into the bottom of the prepared pan and bake for 15 minutes until lightly golden.
In a large bowl, beat the softened cream cheese and 0.75 cup sugar until smooth and fluffy.
Add the eggs and vanilla extract to the cream cheese mixture, beating until well combined.
Pour the cream cheese filling over the par-baked crust and spread evenly.
Scatter the diced fresh peaches over the top of the filling.
Bake for 30 minutes, or until the center is set.
Cool completely at room temperature, then chill in the refrigerator for at least 5 hours before slicing into bars.
