Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup granulated sugar, divided
16 oz cream cheese, softened to room temperature
2 large eggs, room temperature
1 tsp pure vanilla extract
3 cups fresh peaches, peeled and thinly sliced
Instructions
Preheat your oven to 350 degrees F and line a 9×9 inch square baking pan with parchment paper.
Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
Press the crumb mixture firmly into the bottom of the pan and chill briefly.
Beat the softened cream cheese and remaining sugar until the mixture is completely smooth.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract until combined.
Pour the cheesecake mixture over the chilled crust.
Arrange the thin peach slices evenly over the top of the filling.
Bake for 45 minutes or until the center is set.
Allow to cool completely and refrigerate for 5 hours before slicing into bars.
Notes
Ensure all ingredients are at room temperature before mixing to prevent lumps in the filling. Chilling the crust before adding the filling helps maintain a firm, professional structure. Keep refrigerated for best storage results.
