1 cup rolled oats
1 cup brown sugar
1 cup unsalted butter, cold and cubed
8 oz cream cheese, softened
1/3 cup granulated sugar
1 large egg
1 tsp vanilla extract
3 cups fresh peaches, diced
1 tsp granulated sugar (for peaches)
1 tsp cornstarch

Instructions

Preheat oven to 350 degrees Fahrenheit and line a 9×9 inch baking pan with parchment paper.
In a large bowl, whisk together flour, oats, brown sugar, and a pinch of salt.
Cut the cold butter into the dry mixture using a pastry cutter or fork until it resembles coarse crumbs.
Press two-thirds of the crumb mixture firmly into the bottom of the prepared pan.
In a separate bowl, beat the softened cream cheese, 1/3 cup granulated sugar, egg, and vanilla until completely smooth.
Spread the cream cheese mixture evenly over the crust layer.
In a small bowl, toss the diced peaches with a teaspoon of sugar and cornstarch.
Distribute the peaches evenly over the cream cheese layer.
Sprinkle the remaining crumb mixture over the top of the peaches and press down lightly.
Bake for 45 minutes or until the topping is golden brown and the edges are set.
Allow bars to cool completely before cutting into 12 squares.
