Ingredients
Shortbread cookies (or graham crackers), 300g (about 3 cups crushed)
Unsalted butter, 115g (1/2 cup), melted
Granulated sugar, 100g (1/2 cup)
Cream cheese, softened, 450g (2 blocks, 8 oz each)
Vanilla extract, 1 teaspoon
Salted caramel sauce, 200g (about 3/4 cup)
Dark chocolate (70% cacao), 200g
Unsalted butter for ganache, 2 Tbsp
Instructions
Combine crushed shortbread and melted butter. Press into a 9×13-inch pan and chill for 30 minutes.
Beat softened cream cheese until smooth. Add sugar and vanilla extract, mixing well.
Stir in salted caramel sauce until fully incorporated. Spread the mixture over the chilled crust.
Refrigerate cheese-caramel layer for 1 hour.
Melt dark chocolate with butter until smooth. Drizzle over the chilled layer.
Chill the entire bar for 2 hours before slicing into 16–20 pieces.
Notes
Shortbread yields a more authentic Twix flavor. Confirm salted caramel sauce is non-alcoholic. Use 70%+ cacao chocolate for rich ganache. Refrigerate for 4 hours total to set properly.
