Ingredients
Ladyfingers (Savoiardi) approx. 24-30 cookies
Strong Brewed Coffee or Espresso 1.5 cups (cooled)
Mascarpone Cheese 8 ounces (full-fat, softened)
Cream Cheese 16 ounces (full-fat, softened)
Granulated Sugar 1 cup
Vanilla Extract 1 teaspoon
Cocoa Powder 1/2 cup
Chocolate Shavings (for garnish)
Powdered Sugar (for dusting)
Instructions
Prepare 12″ springform pan by greasing edges and bottom.
Whisk cream cheese and 3/4 cup sugar until smooth. Fold in mascarpone and 1 teaspoon vanilla extract.
Dip ladyfingers in cooled coffee (2-3 cookies per layer), arranging first layer in pan.
Pour half the cream cheese mixture over ladyfingers. Sprinkle 1/4 cup cocoa powder.
Repeat with second layer of coffee-soaked ladyfingers and remaining cream cheese mixture.
Refrigerate 6 hours or overnight until firm.
Before serving, dust top with remaining cocoa and add chocolate shavings.
Notes
Use firm ladyfingers to prevent sogginess
Chilling is critical for proper set
Store in fridge up to 3 days in airtight container
Serving with fresh berries adds contrasting tartness
