2 cups graham cracker crumbs

1 (14-ounce) can sweetened condensed milk
1/2 cup freshly squeezed lemon juice
1 teaspoon vanilla extract

Instructions
Prepare an 8- to 9-inch springform pan or large dish.
In a bowl, mix graham cracker crumbs, sugar, and melted butter until crumbly.
Press the mixture firmly into the prepared pan. Chill for 30 minutes.
In a large bowl, beat cream cheese until smooth.
Gradually mix in sweetened condensed milk.
Stir in lemon juice and vanilla extract until fully combined.
Pour the mixture over the chilled crust.
Cover and refrigerate for at least 4 hours or overnight.
Garnish with lemon zest before serving.
Notes
Crushed digestive biscuits or shortbread cookies can substitute graham crackers if unavailable.
For a completely alcohol-free version, use alcohol-free vanilla extract.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
