Ingredients
Pre-made graham cracker crust (9-inch, sugar-free)
2 cups fresh strawberries, hulled and thinly sliced
1 package (3 oz) sugar-free strawberry gelatin mix
1 cup boiling water
1/2 cup cold water
8 oz cream cheese, softened
1 cup heavy whipping cream, chilled
2 tablespoons sugar substitute (e.g., erythritol or stevia)
Instructions
Press graham cracker crust into a 9-inch pie dish and chill for 30 minutes
In a bowl, mix gelatin with boiling water and stir until dissolved
Add cold water and stir to dissolve gelatin completely
Blend in softened cream cheese until smooth
Whisk in chilled heavy whipping cream and sugar substitute until mixture is thick and glossy
Pour filling into chilled crust and smooth top
Refrigerate for 4 hours or until firm
Top with remaining strawberries before serving
Notes
If making crust from scratch, use sugar-free graham crackers and melted butter
For best results, use a rolling pin to press the crust firmly
Pie can be prepared 8-12 hours ahead
Store in refrigerator for up to 3 days
Optional: top with crushed freeze-dried strawberries for colorful garnish
