Ingredients
1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
¼ cup granulated sugar
2 (8-ounce) packages cream cheese, softened
1 (14-ounce) can sweetened condensed milk
2 tablespoons lemon juice
1 teaspoon vanilla extract
2 cups fresh strawberries, hulled and sliced
½ cup strawberry jam or preserves
Instructions
Mix graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press the mixture into a 9-inch springform pan.
In a large bowl, beat cream cheese until smooth. Gradually add sweetened condensed milk, mixing until well combined.
Stir in lemon juice and vanilla extract. Spoon the filling over the prepared crust and smooth the top.
Chill the cheesecake for 4-6 hours until firm. Spread a layer of sliced strawberries over the chilled filling.
Before serving, garnish the top with whole strawberries and a drizzle of strawberry jam.
Notes
Substitute graham cracker crumbs with crushed digestive biscuits or vanilla wafers if preferred.
Chilling time is crucial for achieving the right consistency. Ensure the cheesecake is fully chilled before serving.
Use fresh strawberries for the best flavor and color. Overripe strawberries work well for the topping.
