1.5 cups graham crackers, finely crushed
6 tbsp unsalted butter, melted
16 oz cream cheese, softened
0.5 cup granulated white sugar
1 cup heavy cream, cold
3 large fresh peaches, peeled and sliced
1 tsp gelatin (optional for firm texture)
Instructions
Combine graham cracker crumbs and melted butter in a bowl until it resembles wet sand.
Press the mixture firmly into the bottom of a nine-inch springform pan.
Chill the crust for twenty minutes.
Beat softened cream cheese and sugar in a large bowl until smooth.
Whip cold heavy cream in a separate bowl until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Spread half of the filling over the chilled crust.
Layer one-third of the sliced peaches over the filling.
Top with remaining filling and garnish with the remaining peach slices.
Refrigerate the cheesecake for at least six hours until fully set.
Notes
Ensure the cream cheese is fully at room temperature to avoid lumps.
For a cleaner look, you can toss peach slices in a little lemon juice to prevent browning.
This dessert is best served chilled directly from the refrigerator.
Store leftovers covered in the refrigerator for up to 3 days.
