Ingredients
1.5 cups graham cracker crumbs
6 tbsp unsalted butter, melted
16 oz cream cheese, softened to room temperature
0.5 cup granulated sugar
3 tbsp fresh lime juice
1 tbsp fresh lime zest
0.5 cup heavy cream, whipped to soft peaks
Instructions
Combine graham cracker crumbs and melted butter in a bowl until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom of an 8×8 inch square pan lined with parchment paper.
Chill the crust in the refrigerator for 20 minutes to solidify.
In a large bowl, beat the softened cream cheese and sugar together until completely smooth.
Stir in the fresh lime juice and lime zest until well combined.
Fold in the whipped heavy cream until the mixture is light and uniform.
Spread the filling evenly over the chilled crust.
Refrigerate for at least 4 hours until firm before slicing into 16 equal bites.
Notes
Ensure cream cheese is fully at room temperature to avoid lumps. For a cleaner cut, run a sharp knife under hot water and wipe dry between each slice. Store in an airtight container in the refrigerator for up to 3 days.
