Ingredients
1.5 cups graham crackers, crushed
6 tablespoons unsalted butter, melted
0.25 cup granulated sugar
2 packages (8 oz each) cream cheese, full-fat, softened
1 can (14 oz) sweetened condensed milk
0.5 cup fresh lemon juice (2–3 large lemons)
1 tablespoon lemon zest
Instructions
Crush graham crackers into fine crumbs.
Mix cracker crumbs with melted butter and 0.25 cup sugar.
Press crust mixture firmly into the bottom of a springform pan.
Combine cream cheese, sweetened condensed milk, lemon juice, and zest in a blender or food processor until smooth.
Pour filling into prepared crust.
Cover and refrigerate at least 4 hours until set.
Chill before serving, preferably overnight.
Garnish with additional lemon zest if desired.
Notes
Substitute graham crackers with digestive biscuits or vanilla wafers
Use room-temperature cream cheese for smooth blending
Chill for optimal firmness and flavor
Store in refrigerator up to 5 days
