1 ½ cups graham crackers, finely crushed (about 10–12 crackers)
6 tablespoons unsalted butter, melted
1 can (14 oz) sweetened condensed milk
½ cup key lime juice (or regular lime juice)
8 ounces cream cheese, softened
1 teaspoon vanilla extract
¼ teaspoon salt
Instructions
Blend graham crackers and ¼ teaspoon salt in a food processor until fine crumbs form.
Stir in melted butter until mixture resembles wet sand.
Press ½ of the mixture evenly into a greased 9×13-inch pan as the crust.
In a bowl, combine sweetened condensed milk, key lime juice, cream cheese, and vanilla extract until smooth and fluffy.
Spread the filling over the crust and press the remaining crumbs to cover the top.
Chill for 4-6 hours until firm.
Lift edges with a spatula, cut into 16-20 bars, and serve.
Notes
Use a hand mixer or food processor for smoother filling.
Chill in an airtight container for up to 3 days.
Substitute digestive biscuits or shortbread if graham crackers are unavailable.
Brush the top with extra lime juice before chilling for a glossy finish.
