1 cup creamy peanut butter
1/2 cup unsalted butter, melted and cooled
1 1/2 cups graham cracker crumbs
2 cups powdered sugar, sifted
1 cup chocolate chips, semi-sweet or milk
2 tbsp creamy peanut butter for the topping
Instructions
Combine the melted butter, 1 cup of peanut butter, and powdered sugar in a large bowl until smooth.
Fold in the graham cracker crumbs until the mixture is uniform and resembles a dough.
Press the mixture firmly into an 8×8 inch square pan lined with parchment paper.
Melt the chocolate chips with the additional 2 tablespoons of peanut butter in the microwave in 30-second intervals, stirring until glossy.
Pour the melted chocolate over the base and spread evenly with a spatula.
Refrigerate for at least two hours until the topping is completely set before slicing.
Notes
Use natural peanut butter only if you are prepared for extra stirring as it may be oilier. Ensure the butter is slightly cooled before mixing to prevent the sugar from clumping. Store leftovers in the refrigerator to maintain the perfect sliceable texture. Lining the pan with parchment paper is recommended to make removing the frozen bars easier.
