Ingredients
1 cup unsalted butter (room temperature)
1 cup brown sugar (packed)
1 cup buttermilk
1/4 cup coffee (decaf recommended)
2 tsp vanilla extract (non-alcoholic)
1 1/4 cups all-purpose flour
1/2 cup cake flour
1/2 cup chocolate chips (for bottom layer)
3/4 cup powdered sugar (for glaze)
Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish
In a stand mixer, cream butter and brown sugar until light and fluffy
Add buttermilk, coffee, and vanilla extract to the butter-sugar mixture
Divide batter into two portions
Fold chocolate chips into the first portion (bottom layer)
Pour chocolate batter into the prepared dish and smooth the surface
Spread the remaining plain batter over the top layer
Bake for 25-30 minutes until a toothpick comes out clean
Let cool slightly before spreading a thin layer of powdered sugar glaze
Allow to cool completely before slicing
Notes
Use halal-certified butter if available
For vegan option, substitute buttermilk with 1 cup non-dairy milk + 1 tbsp lemon juice
Non-alcoholic vanilla extract is essential for halal compliance
The coffee amplifies chocolate flavor without altering taste—skip if not desired
