Ingredients
1 ½ cups graham cracker crumbs (about 10 full graham crackers)
6 tablespoons unsalted butter, melted
1 (14 ounce) can sweetened condensed milk
½ cup key lime juice (from about 10–12 limes)
4 large egg yolks
Instructions
Preheat oven to 350°F (175°C)
Mix graham cracker crumbs and melted butter until well combined and crumbly
Divide mixture among 12 mini pie cups (approximately 3 ½ inches in size) and press firmly to form a crust. Bake for 8-10 minutes, then let cool slightly and set aside
In a medium mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth
Spoon the filling into each prepared mini crust, filling to the top
Chill for at least 2 hours before serving
Notes
For a nutty flavor, consider adding a tablespoon of finely chopped pecans to the graham cracker crust
Freshly squeezed key lime juice is highly recommended for the best flavor
