Ingredients
1.5 lbs strawberries, fresh and hulled
1/4 cup granulated sugar
1 tbsp lemon juice, freshly squeezed
2 packages (8 oz each) cream cheese, full-fat, softened
1 cup powdered sugar
1 tsp vanilla extract, pure
2 cups graham cracker crumbs
1/3 cup melted butter, unsalted
Instructions
Mix 1.5 lbs strawberries with 1/4 cup sugar and 1 tbsp lemon juice in a bowl; refrigerate 2-4 hours to macerate. Beat 16 oz cream cheese with 1 cup powdered sugar and 1 tsp vanilla until smooth. Press graham cracker crumbs mixed with 1/3 cup melted butter into a 9-inch springform pan. Spread half the cream cheese mixture over the crust. Layer macerated strawberries (drained and reserved syrup) on top. Spread remaining cream cheese mixture evenly. Chill for at least 4 hours. Garnish with remaining strawberries before serving.
Notes
Make ahead up to 24 hours. Substitute strawberries with raspberries or blueberries. Use Neufchâtel cheese for a lighter texture. Store covered in refrigerator.
