Ingredients
1 ½ cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter (softened)
2 large eggs
½ cup milk
1 cup fresh blueberries
1 tablespoon lemon zest
¼ cup brown sugar (streuelsel)
2 tablespoons all-purpose flour (streuelsel)
½ teaspoon ground cinnamon (streuelsel)
Instructions
Preheat oven to 350°F (175°C)
Line a 9-inch round cake pan with parchment paper
In a bowl, whisk flour, baking powder, salt, and ¼ cup brown sugar for streusel
In another bowl, cream butter and sugar until fluffy
Beat in eggs one at a time, then stir in milk and lemon zest
Fold in blueberries
Press half the batter into the prepared pan
Sprinkle streusel (brown sugar, flour, cinnamon) evenly over batter
Top with remaining batter
Bake for 35–40 minutes until golden and a toothpick comes out clean
Notes
Use room temperature butter and eggs for proper aeration
For frozen blueberries, toss in 1 tbsp flour before folding to prevent sogginess
Substitute ½ cup dairy-free milk for standard milk if preferred
Let cool slightly before slicing for cleaner pieces
