Ingredients
1.5 cups Graham Crackers, finely crushed
6 tablespoons Unsalted Butter, melted
1 can (14 ounces) Sweetened Condensed Milk
1/2 cup Key Lime Juice, fresh
1–2 teaspoons Lime Zest
Instructions
1. Prepare the crust: In a small bowl, combine the finely crushed graham crackers with the melted butter. Stir until evenly moistened.
2. Press the mixture into the bottom of 12 mini shooter glasses or small dessert cups, creating an even layer.
3. Prepare the filling: In a medium bowl, whisk together the sweetened condensed milk, fresh key lime juice, and lime zest until smooth and well combined.
4. Pour the key lime filling evenly over the crust in each shooter glass.
5. Chill: Cover the shooters with plastic wrap and refrigerate for at least 10 minutes to allow the filling to set slightly.
6. Serve: Garnish with additional lime zest or a small slice of lime, if desired. Serve chilled.
Notes
Can substitute graham crackers with digestive biscuits or shortbread cookies.
If key limes are unavailable, use bottled key lime juice, but taste and adjust sweetness if needed.
These can be made a day in advance and kept chilled.
For a richer topping, consider adding a dollop of whipped cream before serving.
