Ingredients
16 oz cream cheese, softened to room temperature
2 cups blanched almond flour
1/4 cup unsalted butter, melted
3/4 cup powdered erythritol, sifted
1 cup fresh or frozen blueberries
1/2 cup heavy cream, cold
1 tablespoon fresh lemon juice
1 tablespoon powdered erythritol (for the crust)
Instructions
Combine almond flour, melted butter, and 1 tablespoon of sweetener in a mixing bowl until crumbly.
Press the almond mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
Place the crust in the freezer for 15 minutes to set.
In a large bowl, beat the softened cream cheese with the remaining sweetener and lemon juice until light and fluffy.
In a separate chilled bowl, whip the cold heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until smooth and uniform.
Spread the filling evenly over the chilled crust.
Top with fresh blueberries and refrigerate for at least 4 hours before serving.
Notes
Ensure the cream cheese is fully softened to room temperature to avoid lumps in the filling. Use a high-quality powdered erythritol to maintain a smooth texture. The cheesecake can be stored in the refrigerator for up to 3 days. For a firmer set, you may refrigerate for longer or leave overnight.
