Ingredients
1 cup all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract (alcohol-free preferred)
3 tablespoons vegan butter
3 tablespoons unsalted butter (for frying)
1/4 teaspoon light brown sugar (for glaze)
1 tablespoon milk (glaze binder)
Instructions
Whisk flour, sugar, baking powder, cinnamon, and salt in a large bowl
Heat oil (unsalted butter) in a non-stick pan to 350°F
Add buttermilk and vanilla to dry ingredients
Melt vegan butter completely in microwave
Spoon 3-inch circles of batter onto hot oil and cook 2-3 minutes
Flip donuts carefully and cook 1 additional minute
Transfer to paper towel-lined plate
Blend brown sugar and milk for glaze
Dip warm donuts in glaze until coated
Press donuts into coconut flakes or sprinkles (optional)
Let glaze set for 10 minutes
Notes
Regular milk with lemon juice can substitute buttermilk (1 cup milk + 1 tsp lemon juice or vinegar, let sit 5 minutes)
Coconut flakes or sprinkles are optional coatings
