Ingredients
4–6 large ripe peaches (about 2 lbs)
1 cup granulated sugar
Juice of 5 large lemons (about 1 1/2 cups)
4 cups water
Optional: Fresh mint leaves (for garnish) or apple cider vinegar
Instructions
Peel and pit peaches, then chop into chunks.
In a saucepan, mix chopped peaches, sugar, and 1 cup water. Simmer gently for 10-15 minutes until peaches break down and syrup thickens.
Strain the syrup, pressing the solids to extract maximum flavor.
Add 4 cups water and lemon juice to the syrup. Adjust sweetness by adding up to 1/4 cup more sugar if desired.
Chill in the refrigerator for at least 30 minutes before serving.
Serve over ice, optionally strained for a smoother texture. Garnish with mint leaves if desired.
Notes
Use freestone peaches for easier pitting
Adjust sugar amount based on peach ripeness and sweetness preference
Add 1/4 cup apple cider vinegar for a tangier profile
