Ingredients

1 cup vanilla whey or casein protein powder
1 cup non-fat plain Greek yogurt
1.5 cups oat flour
2 tsp baking powder
2 tbsp ground cinnamon
0.5 cup stevia or erythritol sweetener

Instructions

Preheat your oven to 350 degrees Fahrenheit.
Combine the oat flour, protein powder, and baking powder in a large mixing bowl.
Add the Greek yogurt to the dry ingredients and stir until a shaggy dough forms.
Knead the dough on a lightly floured surface for three minutes until smooth.
Roll the dough out into a thin rectangle using a rolling pin.
Spread a mixture of sweetener and cinnamon evenly across the surface of the dough.
Roll the dough tightly from one long edge to the other.
Cut the log into eight equal portions using a sharp serrated knife.
Place the rolls into a greased baking dish with space between them.
Bake for fifteen minutes.

Notes
