Instructions
Mix graham cracker crumbs, ¼ cup sugar, and melted butter until crumbly. Press the mixture into 12-15 mini ramekins and refrigerate while preparing the filling.
In a bowl, whisk sweetened condensed milk, key lime juice, zest, and salt until smooth.
Fill each crust with the lime mixture, then refrigerate for 4-6 hours until set.
Notes
Use a food processor to finely crush graham crackers for an even crust.
For a vegan option, substitute butter with melted coconut oil and use vegan sweetened condensed milk.
Chill pies for at least 4 hours; overnight chilling improves texture.
