Ingredients
32 oz cream cheese, room temperature
1 cup granulated sugar
1.5 cups high-quality white chocolate chips
2 cups fresh strawberries, pureed or sliced
2 cups graham cracker crumbs
0.5 cup unsalted butter, melted
4 large eggs, room temperature
Instructions
Preheat oven to 350°F (175°C).
Combine crushed graham crackers with melted butter and press firmly into a 9-inch springform pan.
Bake the crust for 10 minutes and cool completely.
Melt white chocolate in a glass bowl using a microwave in 30-second intervals.
Beat softened cream cheese and sugar until light and fluffy.
Slowly incorporate the cooled melted white chocolate into the cream cheese mixture.
Add eggs one at a time, beating on low speed until just combined.
Pour the batter over the prepared crust.
Bake in a water bath at 325°F for 60 minutes.
Cool at room temperature before chilling in the refrigerator for at least 4 hours.
Notes
Ensure all ingredients are at room temperature to avoid lumps in the batter. Use a water bath to ensure gentle, even cooking and prevent cracks. Chill for at least 4 hours for clean slicing.
