Ingredients
1.5 cups fresh strawberries, hulled and quartered
1 cup fresh lemon juice (from 4–6 lemons)
3/4 cup granulated sugar
1.5 cups water
8–10 popsicle molds
Instructions
Combine 3/4 cup sugar and 1.5 cups water in a saucepan. Heat over medium, stirring until sugar dissolves.
Remove syrup from heat and let cool completely.
In a blender, puree 1.5 cups fresh strawberries until smooth.
Pour the cooled sugar syrup into a bowl and stir in the strawberry puree.
Add 1 cup fresh lemon juice and mix thoroughly.
Pour the mixture into popsicle molds. Insert popsicle sticks.
Freeze for 4-6 hours until fully solid.
Remove from molds and serve.
Notes
Frozen strawberries can be used in place of fresh.
Bottled lemon juice is an alternative but fresh is recommended for better flavor.
For a different sweetness, substitute sugar with honey or maple syrup.
Store leftovers in a sealed container in the freezer for up to 2 weeks.
