Ingredients
Graham cracker crumbs, 1 ½ cups
Unsalted butter, 6 tablespoons melted
Sweetened condensed milk, 1 (14 ounce) can
Fresh lemon juice, ½ cup
Fresh strawberries, 1 ½ cups, hulled and pureed
Lemon zest, 1 teaspoon (optional)
Instructions
Combine graham cracker crumbs and melted butter in a medium bowl
Stir until crumbs are evenly moistened
Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate
Chill the crust in refrigerator for 15 minutes
Blend strawberries in a food processor until smooth
In a large bowl, mix sweetened condensed milk with fresh lemon juice and lemon zest
Pour the mixture into the chilled crust
Freeze for at least 4 hours before serving
Notes
For a chocolatey crust, substitute chocolate cookie crumbs
Use margarine or coconut oil for a dairy-free crust
Lemon zest enhances citrus flavor recommended – use unwaxed lemons
Pie is best served chilled
