Ingredients
1.5 cups hot water
1/4 cup granulated sugar
1/4 cup instant espresso powder
1 pound (approx. 450g) mascarpone cheese
2/3 cup heavy cream (must be halal-certified)
2 tbsp granulated sugar
3/4 cup fresh raspberries
24 ladyfingers
Cocoa powder for topping
Instructions
1.5 cups hot water, 1/4 cup sugar, and 1/4 cup instant espresso powder in a shallow dish to dissolve.
Whisk mascarpone (at room temperature) with 2 tbsp sugar until smooth in a bowl.
Beat 2/3 cup cold heavy cream until stiff peaks form, then fold into mascarpone mixture.
Soak ladyfingers briefly in coffee mixture and layer half of them in a dish.
Spread half the mascarpone filling over ladyfingers and top with 3/4 cup raspberries.
Repeat layers and refrigerate for 4 hours
Sprinkle cocoa powder on top before serving.

Use alcohol-free espresso powder if possible for halal compliance
