2 cups all-purpose flour
1 cup granulated sugar, divided
1 cup unsalted butter, cold and cubed
3 cups fresh blackberries
2 tablespoons cornstarch
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Combine the flour, 1/2 cup of sugar, and cold butter in a large mixing bowl.
Mix the ingredients until the dough forms coarse, pea-sized crumbs.
Press two-thirds of the mixture firmly into a lined 9×9-inch baking pan.
Toss the blackberries with the remaining 1/2 cup of sugar, cornstarch, and vanilla extract in a medium bowl.
Spread the blackberry mixture evenly over the pressed-down crust base.
Crumble the remaining dough mixture over the top of the blackberries.
Bake for 45 to 50 minutes until the top is golden brown and the fruit filling is bubbling.
Notes
If using frozen blackberries, ensure they are fully thawed and drained of excess liquid to maintain the structural integrity of the bars. Store leftovers in an airtight container in the refrigerator for up to 3 days.
