No reviews

This decadent fusion dessert combines the smooth, creamy richness of a classic New York-style cheesecake with the warm, spiced notes of seasonal pumpkin pie. Perfectly balanced and velvety in texture, this recipe simplifies the baking process by blending the pumpkin custard directly into the cheesecake batter. The result is a professional-quality treat that is ideal for holiday gatherings or cozy autumn weekends. Using a water bath and slow cooling ensures a flawless, crack-free finish every time.

  • Total Time: 360
  • Yield: 12 servings 1x

Ingredients

Scale

24 oz cream cheese, room temperature
1 cup canned pumpkin puree (not pie filling)
1 cup granulated sugar
3 large eggs, room temperature
2 tsp pumpkin spice
1 graham cracker crust

Instructions

Preheat your oven to 325 degrees Fahrenheit.
Beat the room temperature cream cheese and sugar in a large mixing bowl until the mixture is smooth and fluffy.
Add the eggs one at a time, mixing on low speed to prevent excess air from entering the batter.
Fold in the canned pumpkin puree and pumpkin spice until fully combined and streak-free.
Pour the batter into the prepared graham cracker crust, smoothing the top with a spatula.
Place the cheesecake pan inside a larger roasting pan and fill the roasting pan with boiling water until it reaches halfway up the sides of the cheesecake pan.
Bake for 60 minutes or until the edges are set and the center still has a slight jiggle.
Turn off the oven and let the cheesecake sit inside for one hour with the oven door propped slightly open.
Remove from the oven, cool completely on a wire rack, and refrigerate for at least four hours before serving.

Notes

Ensure all ingredients are at room temperature to prevent lumps in the batter. Use brown sugar instead of granulated sugar if you prefer a richer, molasses-like depth of flavor. Keep the cheesecake refrigerated; it is best served chilled for optimal texture.
