Ingredients
Graham Crackers (or Digestive Biscuits) – 1.5 cups, finely crushed
Unsalted Butter, melted – 6 tablespoons
Cream Cheese, softened – 2 blocks (8 oz each)
Sweetened Condensed Milk – 1 can (14 oz)
Lemon Juice, fresh – 1/2 cup
Lemon Zest – 1 tablespoon
Vanilla Extract – 1 teaspoon
Instructions
Crush graham crackers into fine crumbs
Mix in melted butter to form a crumbly texture
Press into prepared molds or dish to form the base
In a blender or food processor, combine cream cheese, sweetened condensed milk, lemon juice, lemon zest, and vanilla
Blend until smooth and creamy
Pour over the crust and chill for 2 hours or overnight
Serve chilled with optional lemon wedges

Use dairy-free cheese alternative for vegan version
Chill for at least 2 hours for optimal set
Evaporated milk is NOT a suitable substitute for sweetened condensed milk
