A refreshing no-bake pie made with a graham cracker crust, creamy filling, and fresh berries. Perfect for hot weather, it requires no oven and is easy to assemble.

  • Total Time: 135
  • Yield: 8 servings 1x

Ingredients

Scale

1.5 cups crushed graham crackers
6 tablespoons melted unsalted butter
8 ounces softened cream cheese
1 cup powdered sugar
1 cup cold heavy cream
1 teaspoon vanilla extract
2 cups fresh berries (strawberries, blueberries, raspberries, or a mix)
1 tablespoon lemon juice (optional)

Instructions

Combine crushed graham crackers and melted butter in a bowl. Stir until crumbs are moistened. Press mixture into an 8-inch pie pan or springform pan. Chill for 15 minutes. In a separate bowl, beat cream cheese, powdered sugar, and lemon juice until smooth. Fold in whipped heavy cream and vanilla extract. Spread the mixture over the chilled crust. Top with fresh berries. Chill for at least 2 hours before serving.

Notes

Crushed digestive biscuits can substitute graham crackers. Use margarine for a dairy-free option. Add extra lemon juice for a tangy twist. Store in the refrigerator for up to 24 hours.
