Ingredients
2 large ripe mangoes (preferably Ataulfo)
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
Instructions
Peel and pit the mangoes, cutting the flesh into small, uniform cubes.
Place the mango cubes into a high-speed blender and pulse until a completely smooth puree is achieved.
Transfer the mango puree into a small saucepan set over medium heat.
Stir in the granulated sugar and lemon juice until well combined.
Simmer the mixture gently for about 5 minutes, stirring occasionally, until slightly thickened and consistent.
Remove from heat and let cool; serve chilled or at room temperature.
Notes
Store in an airtight container in the refrigerator for up to 5 days. For extra smoothness, you can pass the finished coulis through a fine-mesh sieve after reducing. Adjust sugar quantity based on the natural ripeness and sweetness of your mangoes.
