Ingredients
Yellow or Lemon Cake Mix
4 large eggs
1 cup full-fat sour cream or plain Greek yogurt
1/2 cup vegetable oil or melted unsalted butter
1/4 cup fresh lemon juice
2 tablespoons lemon zest
1 teaspoon vanilla extract
1.5 cups powdered sugar (for glaze)
Instructions
Preheat oven to 350°F (175°C)
Grease and flour a 9×5-inch loaf pan
In a large bowl, combine cake mix, eggs, sour cream, oil/butter, lemon juice, zest, and vanilla
Mix until smooth
Pour batter into prepared pan
Bake 50-60 minutes until golden and a toothpick comes out clean
Let cool slightly
Whisk powdered sugar with 1-2 tablespoons fresh lemon juice to form glaze
Drizzle over cake and serve
